Winemakers Tasting Notes
Our Collection is a red Rhône blend of Syrah, Grenache and Mourvedré. The framework for this complex blend starts by crafting each component of this wine completely different; keeping the Syrah dark and spicy, the Grenache floral and fruity and allowing the Mourvèdre to be simple and tannic.
At sight the color is a dark sapphire with radiant ruby highlights in the light. Forward facing aromas rush the smell of cooled cherry pie filling that transitions into a spiced red fruit, select barrel toast profiles have provided subtle hints of warm maple and cinnamon in the rear.
Raspberries and Cherries drive the palate from the beginning to the end. Medium in weight and Round, a vanilla bean undertone balances the concentrated red fruit delivering the finish to a mid-height elevation at the rear of the pallet with descending salivary sensations.
FERMENTATION / MATURATION NOTES
The Syrah was cold soaked for 4 days; it is then warmed and is fermented slow and cool with 15% stem inclusion. Our Grenache clusters are ready to ferment the day of picking, a delestage is performed when fermentation is half the way complete to keep the wine fruity and approachable. Mourvèdre is the last to be harvested. The fruit spent 2 days warming before native fermentation started. Gentle pumpovers several times each day relieved the varietals natural reductive nature, the juice movement also promoted primary tannin extraction.
