Sea Shell Cellars 2016 Reserve Syrah

2016 Reserve Syrah

Composition: 100% Syrah

Sea Shell Vineyard

Soil Type:

Rolling alluvial terraces with decomposed limestone deposits along its slopes

This lot was picked early in the morning to keep the fruit cool prior to processing. The Syrah was then de-stemmed and sorted into small open top fermenters that were punched down 2-3 times per day. The Syrah was fermented and macerated on its skins for a total of 13 days prior to being pressed and barreled down.

Aging and Duration:

The Syrah was aged in a mixture of 500L puncheons and 225L barriques, all of which were French oak (~40% new).

Traditionally used as part of the Collection blend, the Syrah from 2016 was so exciting, we just had to make a special Reserve bottling!  This 100% varietal wine is just filled with classic Syrah character, displaying hints of dark fruits, fresh ground peppercorns, and savory, mouth-watering bacon fat.  The palate has great length while still maintaining elegance and freshness, and the finish has all the depth and structure you expect from a classic Paso Robles Syrah.

Winemaker Comments:

The Syrah off of Sea Shell Vineyard is undoubtedly its most aromatically intense and savory variety. It is grown on upper, west-facing slope of the estate, it's steepest terrain.
