Rolling alluvial terraces with decomposed limestone deposits along its slopes

Vinification:

This lot was picked early in the morning to keep the fruit cool prior to processing. The Cab Sauvignon was then de-stemmed and sorted into a stainless steel tank. 10% of its volume was then bled off in order concentrate the varietal intensity of the flavors and tannin from the grape skins. The Cab Sauvignon was pumped over twice per day during fermentation and remained on skins for 21 days prior to pressing. 

Aging and Duration:

The Reserve Cab Sauvignon was aged for 20 months in a mixture of 500L puncheons and 225L barriques, all of which were French oak (~60% new).
